Pancake Sausage Bites, YUM!
Good morning beautiful people! A few days ago I came across a great recipe for homemade corn dogs and absolutely had to share my spin off I made this morning for breakfast!
Breakfast happens to be my favorite meal of the day (when I’m awake early enough for it)! I’ve been known to whip up eggs and pancake for dinner too though! Surely I’m not alone!
I’m all about easy peasy recipes that don’t involve a lot of effort. Sue me. I have my hands full and the less ingredients, the fewer dishes, the happier I am!
So for my Pancake Sausage Bites I used these store bought ready-made items!
It’s completely your preference what brand you use.
| I used a mini 24 cup muffin pan sprayed with non-stick spray. |
I had a ketchup bottle that was empty and prepared the pancake batter in it for easy pouring into the tins.
Although my sausage links were fully cooked I like a crunch to them so I browned them in a skillet with a small amount of water and then removed them from the stove. I used 8 sausage links cut into thirds to fill my 24 muffin tins.

I filled each tin with about a 1 TBSP of pancake batter. Don’t worry. It doesn’t look like much, but will rise when you place the sausage pieces in the center.

The syrup drizzle was an awesome idea! When you bite into them it’s a sweet surprise! I baked them in the oven for 12 minutes on 325 degrees.

Here’s another close-up shot of this gooey goodness! Way tastier than the store bought kind!
These were a hit with Sweet Pea and Boss! I will definitely be making these again in the future when I have family over! It’s a great finger food for breakfast mornings and even better on the go!
